Amaranth Clusters

Amaranth is a grain high in protein and iron -- and when mixed with oats, nuts, dried fruit, and honey, it makes for a tasty snack.

Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup amaranth
  • 1/2 cup macadamia nuts, toasted and chopped
  • 1/2 cup dried cherries, chopped
  • 1/2 cup dried apricots, chopped
  • 1/4 cup honey
  • 2 large eggs (whites only)
  • Kosher salt

Directions

  1. Combine oats, amaranth,
    macadamia nuts, dried fruit,
    and honey in a medium bowl.
    Whisk egg whites with 1/4 teaspoon
    salt until foamy. Pour over
    dried fruit and stir to combine.

  2. Preheat oven to 350 degrees. Line
    a baking sheet with parchment.
    Scoop 3 tablespoons mixture
    (using an ice cream scoop)
    and pat into a 3-inch round
    on baking sheet. Bake, rotating
    tray, until clusters are
    golden brown, 15 to 18 minutes.
    Let cool completely.
    Store in an airtight container
    for up to 1 week.

    I couldn't find amaranth. I did a little research and found that it was similar to millet which I always have on hand. The recipe came out great!! Very tasty as a mid morning snack after my green smoothie. I calculated the nutrition for 12 servings and it came out to around 144 calories, 5 g fat.

    Throw all the ingredients back into your chopper to mix the honey and to get a "paisty feel" that will stick em together in snap! My first 12 feel apart.

    also it's week 4 of the cleanse so I added 1/4 cup of special dark chocolate pieces to a double batch... just enough to get me past this and a bit of reward! Now, how many can I have? I am number 3 :-)

    I think next time I'll use half amaranth/half sesame seeds for a more Mediterranean flavor.

    These are delicious! Of course, since I didn't really have any of the ingredients my product is slightly different... But I think whatever goes in, it's a lovely base. I used quinoa that I soaked overnight, wheat germ, shredded coconut, dried apricots, oat flakes, almond slices, honey and the egg whites. Pretty much the leftover bits of cookies and granola recipes. They took a little longer to cook through, perhaps because the quinoa was moist? But so yummy, and moorish!

    Is there another binder that could be used in place of egg whites ? I have used flax or ener-G egg replacer in other recipes, but I am not sure about using in this recipe.
