Rice-Pudding Balls

Ingredients

  • 2 cups skim milk
  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 1/4 teaspoon ground cardamom
  • Salt
  • 1/2 cup arborio rice
  • 1/2 cup golden raisins
  • 1/2 cup unsweetened flaked coconut
  • 1/2 cup raw whole almonds

Directions

  1. Preheat oven to 375 degrees. In a large saucepan, combine milk, sugar, honey, cardamom, and a pinch of salt; bring to a boil over medium-high. Add rice and stir. Partially cover, reduce heat to low, and cook, stirring occasionally, until rice is tender, 30 to 35 minutes.

  2. Transfer rice to a bowl and stir in raisins. Cover with plastic, and refrigerate until cold, at least 2 hours.

  3. Spread coconut and almonds on a rimmed baking sheet and bake, tossing occasionally, until coconut is golden, 4 to 6 minutes; set aside to cool. Grind nuts and coconut in a food processor until very finely ground; set aside.

  4. Using level tablespoons, form rice mixture into balls (you should get about 24) and roll in coconut mixture. Place on a rimmed baking sheet and refrigerate until firm, at least 1 hour or covered, up to 2 days.

    Eightball - I suggest crushed cornflakes or wheat germ for the nuts and coconut in the recipe.

    You can get unsweetened coconut at most health food stores. Whole Foods has it in the bulk section.

    I appreciate nutritional information with the recipes too, including calories. I'm glad that niether darcycoronin nor her guests haven't any weight or health issues requiring this information tio be important during the holidays. She is truely blessed. I try to have this information available for my guests (or co-workers) who are on Weight Watchers or other programs, and who need the information to help them stay on track.

    Where can you find unsweetened coconut? The baking aisle in all my nearby grocery stores carry only bags of sweetened flaked coconut. Help!

    Can we have some checks for accuracy and consistency within a recipe please. I could use a clarification regarding the last line of step 4 which says".......covered, up to 2 days." and the "helpful hint" which says: " to store, refrigerate up to one day". So do I make this recipe one day ahead or can I make it 2 days ahead? It is important when planning a large gathering to know how far ahead I can make recipes. You can only leave so much for the last day!!!

    Get a grip...it's the holidays! Look at the ingredients, there is barely any sugar and the only fat would come from nuts...stop worrying so much, it's not as if guests are going to ask you for a calorie count!
