Sardine-and-Pepper-Topped Cracker

Ingredients

  • 1 oil-packed piquillo pepper (drained and thinly sliced into rings)
  • 1 oil-packed Spanish sardine (drained and halved, bones removed)
  • 1 whole-wheat Wasa cracker
  • A few baby arugula leaves
  • 1/4 teaspoon fresh lemon juice

Directions

  1. Place pepper and sardine on cracker. Top with arugula. Drizzle with lemon juice.

    I always leave the bones in the sardine. They are crunchy, not spiky and they are FULL of calcium. Delicious and who has time to bone out sardines?
