Preheat oven to 425 degrees. In a food processor, combine bread, walnuts, and Parmesan; season with salt and pepper. Process until fine breadcrumbs form. Transfer to a shallow bowl. In another shallow bowl, beat egg white until frothy.
Season chicken with salt and pepper. Dip each breast into egg white, letting excess drip off, and then into crumb mixture, pressing to adhere.
In a large nonstick ovenproof skillet heat oil over medium heat. Add chicken and cook until lightly browned, 1 to 3 minutes. Carefully turn chicken over and put skillet in oven. Bake until chicken is golden brown and cooked through, 8 to 12 minutes.
Serve chicken with lemon slices and green salad.

Another new week night favorite for my family! The chicken stays so juicy; I followed the recipe exactly, and the chicken cooked perfectly. Try it with pecans too! Very yummy.
I did a light fry, but still had to bake for closer to 15-20 minutes. Next time I'll go straight to the oven. Even so, the recipe was delicious. I used pecans instead of walnuts (just what I had in the pantry).

This was a super simple meal to prepare! I am making it this week! Very moist and flavor filled-it's a great recipe for someone who wants to try something new, but doesn't want to spend a lot of time or who isn't a "pro" chef! :)
I actually bake the chicken immediately without frying. The oven should be preheated. THe same amount mentioned in the receipe take about 40 mins, only turning them once.

This was incredibly delicious! I used a whole wheat pita since I didn't have the bread, and the breading came out fine. The chicken was moist and yummy, and I served it with baked sweet potato fries also from Whole Living.
The chicken came out very juicy and flavorful. Unfortunately I had to use vegetable oil as a substitute. Does anyone know where I can find grape seed oil?

I think that halibut or cod would be great fish to use for this dish. I think you could use salmon too, but I don't care for salmon

This is really good. It works with fish, too. Just add lemon zest and thyme to the walnuts instead of the cheese

So good! I used olive oil instead of grapeseed and it was delicious! Loved the crispness of the walnut breadcrumbs on the outside.

This is a tasty chicken meal!!! I served it with grilled onions, zucchini and yellow squash. For a refreshing twist, I squeezed some fresh lemon wedges on the grilled veggies. My husband and I both loved it!

This is such a great dish to have under your belt...so quick, easy and very tasty. For those who want a more substantial meal (maybe for entertaining friends or if you aren't counting the calories) but still something healthy, I served it with steamed green beans, oven-baked potato wedges and some lemon mayo on the side (I did it this way as my husband loves potatoes and won't eat a meal without them!) p.s. I used groundnut oil which also works very well.

Not to worry about this receipe. Everything is for good health. Yolk has been eliminated, high fiber with whole wheat bread and walnujts are encouraged in a heart smart diet. Look at South Beach program devised by a heart surgeon. It's as if receipe was written for this plan or any other. Also, try substituting toasted pistachios in receipe. It is Yummy as well!

I made this dish again this week...so good! I had leftovers this time so I sliced the chicken into thin strips and used it in a wrap for a work lunch. Whole wheat wrap, baby spinach, dried cranberries, warmed chix strips, drizzle with a little balsamic vinagrette...yum!
I made this last night...easy easy easy and yummy...different taste than average chicken dish. I will make it again. (Finished product looks like the pic too :P)
