In a large skillet over medium heat, melt the butter. Add the corn, shallots, sugar, and salt and pepper. Cook, stirring occasionally to prevent burning, until the corn is caramelized, about 5 minutes.
Stir in the thyme and cook 5 minutes more. Season with salt and pepper.
Made this with the Grilled Chicken with Red Pepper and Basil. All was great. I did make a couple adjustments since I eat "Yeast Free". I replaced the butter with vegan butter and the pinch of sugar with 1 packet of stevia. These changes were undetectable. This was a yummy and filling meal!
