Enlightened Creme Fraiche

This "enlightened" version of creme fraiche has a higher ratio of low-fat buttermilk to high-fat cream.

  • 1/2 cup buttermilk
  • 1/2 cup heavy cream


  1. Combine the ingredients in a plastic container. Set the mixture aside in a warm place for 24 to 36 hours, until thickened. Refrigerate immediately.

  2. Whip until thickened before serving.

Cook's Note

Creme fraiche will keep, tightly covered, for about 4 days in the refrigerator.
