Healthy Blueberry Menu

You may love these fruits for their sweet flavor, but it's the abundance of nutrients in each one that should make blueberries truly irresistible. A great source of antioxidants, these berries are believed to aid in the prevention of heart disease and certain cancers, and to help reverse memory loss. Recent studies also suggest that anthocyanins -- which give the fruit its vibrant color -- may improve vision.

Blueberries are wonders in the kitchen as well. Perhaps most familiar on the breakfast table -- sprinkled over cereal or added to pancakes -- they can be used in meals and snacks all day long; choose firm ones that are deep in color and uniform in size. Our blueberry muffins are delicious first thing in the morning or as an afternoon pick-me-up. For dinner, we tossed blueberries with arugula and honeydew to make a summer salad. With jalapenos and herbs, the berries make a piquant salsa for grilled chicken. And to end a meal, a cool blueberry soup is an easy, refreshing dessert.
