Although generally considered diet fare, salads are frequently laden with fat and hidden calories. They are also a great source of fruits, vegetables, and other nutrient-rich foods, so they should still be part of your daily regimen. With this in mind, we've updated five of our favorite salads, eliminating much of the fat and calories but none of the flavor (replacing beef with leaner ground turkey, for instance). Since many prepared dressings are high in fat, we made ours with extra-virgin olive oil and nonfat yogurt, adding citrus juice, cilantro, honey, and mustard for an even fresher taste .
