This is simply delicious! I've eaten it several times as an afternoon snack as well! The almond milk is the perfect compliment to the oats and fruit! love it!
Any suggestions if you don't like coconut???
Meh... First recipe that I won't enthusiastically remake.
Well, maybe the problem is that I didn't find coconut flakes so had to use grated coconut and I ended up some not really appetizing mash.
But even so, I don't find this breakfast to have anything all that interesting.
I had this today for the first time. Used fresh blueberries and raspberries. IT WAS DELICIOUS! I have tried to make muesli in the past , but I never liked it homemade until now. The coconut adds the sweetness. I just went through a cleanse and I am eating healthy now and this is a great alternative to hot oatmeal. Fabulous!
Love this breakfast! It's definitely one of my favorite recipes from the one-month cleanse. I have celiac disease and avoid dairy, and am always looking for new breakfast ideas. It's been years since I've had one, but the flavors in this breakfast remind me a lot of a fruit and yogurt parfait. I'm looking forward to trying this with fresh berries too. Though I didn't mind all the juice from the thawed frozen berry mix. Also, use larger coconut flakes - toast at 375 for about five minutes.
Yummy! Great blend of textures. I agree with the previous reviewer that fresh berries when in season will make this breakfast even better.
You can't go wrong with the flavors in this breakfast treat. I will say it got a little mushy towards the end, but using bigger coconut flakes might help with that. I'll also use fresh berries instead of frozen when they're in season. But overall...yum!
