Sesame-Kale Crisps

Ingredients

  • 1 bunch kale, stems removed and leaves torn into 2-inch pieces
  • 2 tablespoon extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/4 cup sesame seeds
  • Coarse salt

Directions

  1. Heat oven to 200 degrees.

  2. In a large bowl, drizzle kale with oil, lemon juice, and sesame seeds. Season with salt. Toss until evenly coated.

  3. Transfer to a rimmed baking sheet and bake for 30 minutes. Remove from oven and, using a spatula, flip kale leaves over. Return to oven and continue cooking until kale is dry and crisp, 20 to 25 minutes more. Let cool completely. Store in an airtight container for up to 3 days.

    Its around 500 cal for the entire batch, if prepared as stated. Instead, after laying them on a cookie sheet i sprayed them with olive oil spray, toss and maybe spray a little more. Then i sprinkled 1 Tblsp of sesame seeds over them and some salt, toss and spread them out. 1/4 c seems excessive. Prepared that way, an entire bunch of kale will be a little over 100 cals.     These kale crisps were delicous! I used them to accompany the week 1 soups. I increased the healthy quotient by using roasted flax seeds instead of sesame seeds.

    These were a highlight and I made daily as a snack. I'm curious why folks think olive oil and kale w/sesame are high caloric - seems in line with the detox strategy. The amount of sesame seeds was too much so I cut in 1/2 - too many clumps. I also found I need to bake for more than an hour for the crispy effect. It was more like 45 on each side and then turned off oven and left in til morning. Will make these throughout the year! Tasted like light chips - highly recommend for non kale fans!

    I too wish you you calorie count. Some of these look really high in calories.

    This looks good. I am in the middle of week 1 and so far, so good. I was wondering where I can find the calorie count on these recipes. The recipes in the January issue of Real Simple have the calories listed.

    I am not a big fan of dark leafy vegetables. I never ate them growing up, but I knew I needed to get them in my diet and this was a wonderful snack food to put in place of my nasty chip habit. I have to say, I absolutely loved them!
