This is one of my favorite things. I crave beet & hummus sandwiches. I omit the cheese out of personal preference and it's still delicious. In response to the previous review: might I suggest roasting a whole bunch of beets and enjoying them throughout the week in smoothies, salads, etc. That is my approach.

please, please tell me you're joking.
shall I REALLY pre-heat my oven to over 400°F and bake ONE single beetroot for 60 minutes?
ARE YOU SERIOUS??? what a waste of energy and money!
    that' s a a whole, green eco-friendly living indeed :(
if you need one baked beetroot, put it into oven while you bake bread, buy 4 pieces baked beetroots in a vacuumed bag at your grocer's or microwave one raw beetroot for approx. 8-10 min
