Heat oil in a medium saucepan over medium heat. Add garlic and cook until fragrant, about 1 minute. Add spinach and stir until wilted, about 2 minutes. Season with salt and pepper.
Spread mashed beans on one of slice toast. Top with artichoke hearts and sauteed spinach. Top with second slice.
I also fixed it on a sprouted grain tortilla and it tasted great but it was a bit messier than when I fixed it with millet zucchini bread. I enjoyed that more.
I tried this recipe on a whole wheat tortilla rather than the toast and it was delicious! I may try it on bread and then grill it in a panini maker next time. The flavors compliment each other quite well.
