    • 1/2 cup baby spinach or whole parsley leaves
    • 2 small beets, sliced
    • Sliced celery
    • 1/2 cup cooked lentils
    • 2 tablespoons blue cheese, crumbled
    • 1 tablespoon toasted walnuts, chopped
