Refreshingly low in fat and calories and made with seasonal ingredients, cold soups go hand in hand with warm weather appetites. Even better, they can be quickly prepared (without turning on the oven) and tucked away in the refrigerator to chill.
Because many flavors are harder to discern at cool temperatures, we've incorporated spices, chiles, and other piquant items into our recipes for watermelon gazpacho, curried corn and buttermilk soup, spicy tomatillo soup with avocado, Asian chicken soup with tofu, and yogurt-basil soup with tomato ice.
