Too-short days, long nights, and a bitter chill in the air amount to one thing: soup season. We've taken the old standbys and given them a makeover that's healthier and much tastier. Our vegetable soup, for instance, pairs the high-fiber grain spelt with tender chickpeas. To give traditional chicken noodle a surprising twist, we added lemongrass, protein-rich soba noodles, and fresh ginger. And since all these soups are easy to freeze, you'll have enough to last you through the thaw.
