Jiggle pincer, then twist in opposite direction to break from claw, leaving meat behind. Place claw on a cutting board. Use the back of a chef's knife to whack both sides of shell and crack. Remove meat.
Lift up "fan," and break it away from shell. Set tail on its side. Push down with hands to crack.

Work down back of shell, applying pressure at sides with thumbs to separate meat from shell and release it in one piece.
Use kitchen shears to cut off ends of knuckle shells, then cut down both sides. Pry open, and remove meat.
