Cheddar and Avocado Sandwich
- 1/4 avocado
- 1 tsp extra-virgin olive oil
- 1 lemon wedge
- Coarse salt and freshly ground black pepper
- 2 slices multigrain bread
- 1 oz extra-sharp cheddar cheese
- 3 to 4 cherry tomatoes, halved
- 1/4 small red onion, thinly sliced
- 1/2 cup sprouts
- Mash avocado with oil and juice of lemon wedge. Season with salt and pepper.
- Spread mashed avocado on one slice of bread. Top with cheddar, tomatoes, red onion, and sprouts. Top with the second slice.
