Hummus, Lemon, and Olive Oil Dressing
Try the dressing on roasted vegetables, or swap it for the mustard on a veggie burger.

- 1/4 cup hummus
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice
- Coarse salt and freshly ground black pepper
- Bitter greens, such as escarole
- Whisk together hummus, olive oil, and lemon juice. Season with salt and pepper. Serve on greens.
