Ingredients
2 teaspoons extra-virgin olive oil
1 large onion, cut into 1/2-inch strips
6 large assorted bell peppers, seeded and cut into 1/2-inch strips
1 teaspoon sugar
1 sprig of fresh thyme
1 sprig of fresh rosemary
1 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
1 tablespoon balsamic vinegar
Your favorite bread or rolls for serving
Directions
- Heat the olive oil in a large pan over medium heat. Add the onions and cook until they start to soften, about 5 minutes.
- Stir in the bell peppers, sugar, thyme, rosemary, salt, and black pepper. Cook, stirring occasionally, until the peppers are soft and caramelized, about 25-30 minutes.
- Once the peppers are tender, stir in the balsamic vinegar. Cook for another 2-3 minutes to allow the flavors to blend.
- Remove the thyme and rosemary sprigs. Spoon the peperonata mixture onto your favorite bread or rolls. Serve warm or at room temperature.
