Black Bean Quesadillas

The salsa does more than bring a spicy kick; along with the spinach and whole-wheat tortilla, it contributes fiber. The beans do, too -- and they also lend a protein boost.

  • 1/2 cup canned black beans, drained and rinsed, mashed with a fork
  • 2 whole-wheat tortillas (8-inch)
  • 1/2 cup thawed frozen spinach, squeezed dry
  • 1/2 cup shredded, reduced-fat pepper-jack cheese (2 ounces)
  • Coarse salt and ground pepper
  • 1/2 cup fresh salsa, for serving


  1. Spread beans over half of each tortilla. Top with spinach and cheese; season generously with salt and pepper. Fold tortillas in half over fillings.

  2. When it's time to eat, place quesadillas on a microwave-safe plate; cook on high power until heated through, about 2 minutes. Top with salsa.

Cook's Note

Night before: Assemble the quesadillas, place in a portable container, and put in the fridge. Using frozen spinach saves on cooking time.

    I probably wouldn't recommend this recipe. I enjoyed it but I would say it would be a keeper in my recipe book. Very healthy though! P.S. If I did make it again I probably wouldn't use as much beans and spinach, that's a very large serving for both! I also made mine in a skillet which, I would recommend .

    Instead of microwaving, I would heat these in a dry skillet so the outside gets crispy.

    For those hoping to use these recipes with the Weight Watchers plan, I recommend not using the nutirition facts provided on this site to calculate your points. If you use the recipe builder on WeightWatchers.com, I find you get a much more accurate count and you can adjust ingredients to lower fat options and calculate based on that. This recipe, as is, is 9 Points. Not unreasonable for dinner.

    I would skip the cheese, and add a tsp of plain good yogurt, and a squeeze of lemon juice.

    Yeah...nobody trying to lose weight should be eating 1/2 c shredded cheese! You can have this recipe...just reduce the cheese to 2 tbsp shredded and use one tortilla folded in half...I'll bet this would be twice as good coming out of the panini press!

    If you are worried about the calories, perhaps omit the cheese or reduce the quantity. That can be the only ingredient on here that I can see that could possibly account for a high calorie/fat content. The other ingredients are very good for you and whole foods. I think it sounds great and would be much healthier than other mex recipes out there.

    Wow! That many calories. Yikes. I'm a Weight Watcher member and I need the Nutritional Information on everything. Thanks for that info PcolaDonna. According to that this recipe is 14 points at WW. I'm afraid I'll have to pass on including it in my healthier eating menu! It does look good though!

    This was delicious! I made it at home and everyone really liked them! They aren't difficult to make and you can even use non-frozen spinach or other types of cheese. It's really inexpensive. I find that one tortilla is enough of a serving, but it makes a great dinner or snack!

    In the Sept. 08 issue, it listed the following: Per serving: 657 calories; 33 g protein; 25 g fat; 76 g carb; 13 g fiber.
