Steamed Broccoli and Squash with Tahini Sauce

Ingredients

  • 1/2 head broccoli florets
  • 1 Delicata squash, sliced and seeded
  • 1 cup mixed tender greens
  • 1 cup thinly sliced red cabbage
  • 2 tablespoons diced red onion
  • Coarse salt and pepper
  • 1/4 cup Tahini Sauce
  • 1 tablespoon toasted sesame seeds

Directions

  1. Steam broccoli florets until bright green and tender, about 4 minutes. Remove and set aside. Steam squash until bright yellow and tender, about 10 minutes.

  2. In a bowl, toss greens, cabbage, and red onion. Top with steamed vegetables and season with salt and pepper. Drizzle with tahini sauce and sprinkle with sesame seeds.

    Another success! It was our first time trying Tahini and I was pleasantly surprised! We too added apple cider vinegar, just to break it up a bit.

    This is absolutely delicious! I followed the advice to add Apple Cider Vinegar to the Tahini Sauce and I also added some pepper. Amazing! It went so well with the broccoli and squash. I also had to use Acorn squash instead of Delicata because of availability, but I found it to be very similar and still full of taste. I will be making this again for sure!

    This is a FANTASTIC recipe that I will be making regularly in the future. I used acorn squash instead of delicata, and I think any squash would be fine. The tahini sauce is the perfect addition the the squash & broccoli. If you find it too bitter, mess around with adding more lemon juice, olive oil, or spices, and try adding a bit of apple cider vinegar as well.

    I LOVED this dinner. I also had to use butternut squash but it turned out great. My detox partner had made it earlier and texted me that it would have been better with cooked cabbage and onions. I steamed the cabbage with the squash and browned the red onions in olive oil and it was amazing.

    The lack of delicata squash is very odd as it's quite abundant here, even at Safeway. This recipe would've been excellent except for the sauce--bitter and had a strange, pungent smell. I could've eaten the steamed squash by itself it was so good. I might, next time, and eat a salad with it on the side: same ingredients, but not all mashed together.

    I agree with the others that this was too bitter. I can't tell if it was the tahini or what, but my whole family said the sauce was way too bitter to enjoy. I used spaghetti squash though and it was delicious!

    I thought it came out delicious! I added a little lime juice to the mix because I love lemon/lime. Very comforting and satisfying.

    Makes loads of delicious dressing, hard not to use too much! This wasn't my favorite dinner. I could only get half eaten. Unfortunately my red cabbage was very bitter, I wonder if there's a fix for that?

    Surprisingly the Whole Foods near me said that Delicata Squash is out of season, which was a bit frustrating since this is supposed to be a January cleanse. I decided to use butternut squash too and it turned out pretty well. I'm looking forward to trying it with delicata when it's back in season.

    Well, it wasn't my favorite.. I probably didn't do something right though. I found it a little too bitter. I actually used butternut squash instead and really enjoyed that. I think I used to much cabbage though, it was a bit strong.

    I couldn't wait for the new year to try this! I made it tonight and it was SO good! The different veggies make every bite super flavorful. The dressing was really good -- a tad bit on the bitter side, so I added a tablespoon of Apple cider vinegar to make it just sweet enough.
