French Lentil Salad is a hearty, nutritious dish made with tender French green lentils, often mixed with vegetables like carrots, onions, and herbs, and dressed in a light vinaigrette for a balanced, flavorful meal.
Ingredients
2 Tbsp extra-virgin olive oil
1 red onion, finely diced
1 carrot, finely diced
1 stalk celery, finely diced
1 cup French green lentils, rinsed
Coarse salt and freshly ground black pepper
1 Tbsp lemon juice
1/4 tsp red pepper flakes
1/2 cup toasted almonds, roughly chopped (optional)
1 cup shredded red cabbage
1 cup torn fresh herbs, such as flat-leaf parsley, tarragon, basil, and/or mint
Directions
- In a saucepan, bring the lentils and 3 cups of water to a boil. Reduce heat and simmer for 20-25 minutes until tender. Drain and let cool.
- Heat olive oil in a skillet over medium heat. Add diced onion, carrot, and celery. Cook until softened, about 5 minutes.
- In a large bowl, combine the cooked lentils, sautéed veggies, red cabbage, and fresh herbs. Add lemon juice, red pepper flakes, salt, and black pepper. Toss well.
- Top with toasted almonds for extra crunch (optional). Serve chilled or at room temperature.
