Ingredients
1 cup all-purpose flour, spooned and leveled
1/3 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 large egg, plus 1 large egg yolk
1/2 cup sugar
1 teaspoon vanilla extract
1/4 cup canola oil
1/2 cup walnuts, coarsely chopped
3 ounces dark chocolate, coarsely chopped (1/2 cup)
1/4 cup finely chopped crystallized ginger
Directions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly grease.
- In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In another bowl, whisk the egg, egg yolk, sugar, vanilla, and oil until smooth. Gradually stir in the dry mixture.
- Fold in the walnuts, dark chocolate, and crystallized ginger until evenly combined.
- Form the dough into a 12-inch log on the baking sheet and flatten slightly.
- Bake for 25-30 minutes or until firm. Let it cool for 10 minutes.
- Slice the log into 1/2-inch thick biscotti and bake for another 10-12 minutes until crisp.
- Let the biscotti cool completely before serving.
