Ingredients

  • 2 cherry tomatoes, halved (about 1/2 pound)

  • 4 teaspoons fresh thyme leaves

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon roasted garlic

  • Kosher salt and freshly ground black pepper, to taste

  • 8 portobello mushrooms, cleaned and stems trimmed (about 3 pounds)

  • Four 1 1/2 x 3-inch shavings Parmigiano-Reggiano cheese (about 1/2 ounce)

  • 4 very thin slices prosciutto (about 1 ounce)

  • 4 tablespoons rough-cut basil pesto

Directions

  • Preheat your grill to medium-high heat.
  • In a small bowl, toss the halved cherry tomatoes with olive oil, thyme, roasted garlic, salt, and pepper.
  • Brush the cleaned portobello mushrooms with olive oil on both sides and season with salt and pepper.
  • Grill the portobellos, gill-side down, for 5-7 minutes until they soften slightly. Flip them over and grill for an additional 3-4 minutes.
  • Once the mushrooms are grilled, remove from the heat and place them gill-side up on a platter.
  • Top each mushroom with the tomato mixture, a slice of prosciutto, a shaving of Parmigiano-Reggiano, and a dollop of basil pesto.
