Ingredients

  • 8 ounces whole-wheat linguine

  • Kosher salt

  • 1 cup raw almonds, toasted and chopped

  • 1 cup parsley leaves, chopped

  • Zest of 1 lemon

  • Juice of 1 lemon

  • 2 tablespoons almond oil or extra-virgin olive oil

  • Freshly ground black pepper

  • 1/4 cup pecorino Romano (1/2 ounce), grated, for serving

Directions

  • Cook the Linguine: Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain the pasta, reserving about 1/2 cup of the pasta water, and set aside.
  • Toast the Almonds: In a small skillet over medium heat, toast the sliced almonds until golden brown, stirring frequently to avoid burning. Once toasted, remove from heat and set aside.
  • Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using), and sauté for 1-2 minutes until fragrant but not browned. Add the lemon zest and juice, stirring to combine.
  • Toss the Pasta: Add the cooked linguine to the skillet and toss to coat in the lemon garlic sauce. If the pasta seems dry, add a bit of the reserved pasta water to loosen it up.
  • Add Almonds and Parsley: Stir in the toasted almonds and chopped parsley. Season with salt and freshly ground black pepper to taste. Toss everything together until well combined.
  • Serve: Transfer the linguine to serving plates, garnish with extra parsley or almonds if desired, and serve immediately.
