Ingredients

  • 2 cups cooked brown rice

  • 1/2 pound ground beef

  • 1 tablespoon sesame oil

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1 carrot, peeled and julienned

  • 1 zucchini, julienned

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1/2 teaspoon red pepper flakes (optional)

  • 2 large eggs

  • 2 tablespoons vegetable oil (for frying eggs)

  • Salt and pepper to taste

  • Fresh cilantro or scallions for garnish (optional)

Directions

  • Heat a large skillet over medium-high heat. Add 1 tablespoon sesame oil and cook the ground beef until browned and fully cooked. Remove the beef from the skillet and set aside.
  • In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until softened, then add the carrot and zucchini. Stir in the soy sauce, rice vinegar, and red pepper flakes (if using). Cook the vegetables for another 5 minutes until they are tender but still crisp.
  • Add the cooked brown rice to the skillet with the vegetables. Spread the rice evenly across the skillet and allow it to crisp up for about 5-7 minutes, stirring occasionally, until parts of the rice are golden and crispy.
  • While the rice crisps, heat 2 tablespoons of vegetable oil in a separate small pan. Fry the eggs until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper.
  • Divide the crisped brown rice mixture between two plates and top each serving with a fried egg. Garnish with fresh cilantro or scallions if desired.
