Ingredients

  • Dry mix

    • 1 cup plus 2 Tbsp. barley flour
    • 1 cup all-purpose flour
    • 1/4 cup dark brown sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1 1/4 teaspoons kosher salt
  • Wet Mix

    • 4 ounces (1 stick) cold unsalted butter
    • 1/2 cup buttermilk
    • 1 large egg
    • Butter for the pan
  • Finish

    • 1/2 cup Three-Citrus Marmalade
    • 1 tablespoon unsalted butter, melted
    • 1 tablespoon sugar

Directions

  1. Preheat the oven to 400°F (200°C). Grease a baking sheet with butter.
  2. Mix the Dry Ingredients: In a large bowl, combine barley flour, all-purpose flour, brown sugar, baking powder, baking soda, and salt.
  3. Prepare Wet Mix: Cut the butter into the dry mix until crumbly. Add buttermilk and egg, stirring until just combined.
  4. Shape: Shape the dough into scones on the baking sheet.
  5. Bake for 12-15 minutes.
  6. Finish: Brush with marmalade and melted butter, sprinkle with sugar, and bake for 5 more minutes until golden.
