Ingredients
Dry mix
- 1 cup plus 2 Tbsp. barley flour
- 1 cup all-purpose flour
- 1/4 cup dark brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 1/4 teaspoons kosher salt
Wet Mix
- 4 ounces (1 stick) cold unsalted butter
- 1/2 cup buttermilk
- 1 large egg
- Butter for the pan
Finish
- 1/2 cup Three-Citrus Marmalade
- 1 tablespoon unsalted butter, melted
- 1 tablespoon sugar
Directions
- Preheat the oven to 400°F (200°C). Grease a baking sheet with butter.
- Mix the Dry Ingredients: In a large bowl, combine barley flour, all-purpose flour, brown sugar, baking powder, baking soda, and salt.
- Prepare Wet Mix: Cut the butter into the dry mix until crumbly. Add buttermilk and egg, stirring until just combined.
- Shape: Shape the dough into scones on the baking sheet.
- Bake for 12-15 minutes.
- Finish: Brush with marmalade and melted butter, sprinkle with sugar, and bake for 5 more minutes until golden.
