  • 8 ounces wheat berries (1 cup), soaked overnight and drained
  • 3 tablespoons sherry vinegar
  • 2 tablespoons fresh orange juice
  • 1/2 teaspoon finely grated orange zest
  • 2 tablespoons walnut oil
  • 1 to 2 celery stalks, thinly sliced crosswise (1 1/2 cups)
  • 1 cup walnuts, toasted and coarsely chopped
  • 3/4 cup finely chopped pitted dates
  • Coarse salt and freshly ground pepper

Directions

  1. Cook the wheat berries in salted boiling water until tender (about 1 hour). Drain and let cool.
  2. In a bowl, whisk together sherry vinegar, orange juice, orange zest, and walnut oil.
  3. Season with salt and pepper.
  4. Combine wheat berries, celery, walnuts, and dates in a large bowl.
  5. Drizzle the dressing over the salad and toss to combine.
  6. Adjust seasoning to taste and serve.
