Ingredients

  • 2 tablespoons reduced-sodium soy sauce

  • 1 tablespoon plus 1 teaspoon finely grated peeled fresh ginger

  • 1 tablespoon plus 1 teaspoon fresh lemon juice

  • 4 cups thinly sliced shiitake mushrooms (8 ounces)

  • 4 boneless, skinless salmon fillets, preferably wild sockeye (5 ounces each; 1 inch thick)

  • Coarse salt to taste

  • 2 teaspoons toasted sesame oil

  • 1 teaspoon black sesame seeds

  • 1 1/3 cups fresh pea shoots (2 ounces)

Directions

  • In a small bowl, whisk together soy sauce, ginger, and lemon juice.
  • In a large skillet, heat 1 teaspoon of sesame oil over medium heat. Add the shiitake mushrooms and cook until tender, about 5-7 minutes. Transfer to a plate.
  • Pat the salmon fillets dry and season with coarse salt. In the same skillet, heat the remaining sesame oil over medium-high heat. Add the salmon, cooking for 3-4 minutes on each side until golden and cooked through.
  • Drizzle the soy sauce mixture over the cooked salmon and sprinkle with black sesame seeds.
  • Add the pea shoots and shiitake mushrooms back to the skillet for a minute to warm them through, then serve everything together.
