Ingredients

  • 8 slices whole-wheat bread, cut into 1-inch cubes (7 to 8 cups)

  • 1 teaspoon extra-virgin olive oil

  • 1 link (8 ounces) Italian turkey sausage, casing removed

  • 3 celery stalks, finely chopped

  • 3 garlic cloves, minced

  • 1 large onion, finely chopped

  • 1 1/4 cups homemade or store-bought low-sodium chicken stock

  • 1 large egg, lightly beaten

  • 1/4 cup coarsely chopped fresh flat-leaf parsley

  • 2 teaspoons finely chopped fresh thyme

  • 2 teaspoons finely chopped fresh sage

Directions

  • Prepare the Bread: Preheat the oven to 350°F. Spread the whole-wheat bread cubes on a baking sheet and bake for 10-12 minutes until lightly toasted. Set aside.
  • Cook the Turkey Sausage: Heat the olive oil in a large skillet over medium heat. Add the turkey sausage, breaking it up with a spoon, and cook until browned, about 5-6 minutes. Remove the sausage and set aside.
  • Sauté the Vegetables: In the same skillet, add the chopped celery, onion, and garlic. Sauté for about 5 minutes until softened.
  • Combine Ingredients: In a large bowl, mix together the toasted bread cubes, cooked turkey sausage, sautéed vegetables, parsley, thyme, and sage. In a separate bowl, whisk together the chicken stock and beaten egg, then pour over the bread mixture. Toss until everything is well coated.
  • Bake the Stuffing: Transfer the stuffing mixture to a greased baking dish and cover with foil. Bake for 25-30 minutes, removing the foil for the last 10 minutes to let the top get crispy.
