  • 1/2 cup (3 ounces) quinoa

  • 4 teaspoons olive oil

  • 1 yellow bell pepper, ribs and seeds discarded, cut into 1/2-inch chunks

  • 2 garlic cloves, minced

  • 2 scallions, thinly sliced

  • 1/8 teaspoon red-pepper flakes

  • 1 teaspoon chopped fresh thyme, plus more for garnish (optional)

  • 1/4 teaspoon coarse salt

  • 1 medium zucchini, halved lengthwise and sliced 1/2-inch thick

  • 1 large celery stalk, diced

  • 1 lime, halved

Directions

  • Toast the almonds in a dry skillet over medium heat, stirring frequently for about 3-5 minutes, until golden and fragrant. Set aside.
  • Rinse the quinoa thoroughly under cold water. In a small pot, bring 1 cup of water to a boil. Add the quinoa, reduce the heat to low, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork and let cool.
  • In a large skillet, heat 2 teaspoons of olive oil over medium heat. Add the yellow bell pepper, zucchini, and celery. Cook for about 5 minutes, stirring occasionally, until vegetables are tender-crisp.
  • In a separate small skillet, heat the remaining olive oil. Add the minced garlic, scallions, red-pepper flakes, fresh thyme, and salt. Cook for 1-2 minutes until fragrant.
  • In a large mixing bowl, combine the cooked quinoa, sautéed vegetables, garlic-scallion mixture, and toasted almonds.
  • Squeeze fresh lime juice over the salad and toss to combine.
  • Garnish with extra thyme if desired, and serve chilled or at room temperature.
