  • Two 8-ounce whole chicken breasts

  • 1 tablespoon ground cumin

  • 1 teaspoon paprika

  • 1/2 teaspoon cayenne pepper

  • 1 tablespoon minced garlic

  • 3 tablespoons fresh lemon juice

  • 2 teaspoons extra-virgin olive oil

  • 1/3 cup finely chopped flat-leaf parsley

  • 1/3 cup tomato juice

  • 1/3 cup chopped fresh cilantro leaves

  • 1/2 teaspoon kosher salt

  • 1/8 teaspoon freshly ground pepper

  • For the Couscous:

  • 1 1/2 cups chicken stock, or low-sodium canned, fat skimmed

  • 1 cup couscous

  • 1/2 teaspoon turmeric

Directions

  • Poach the Chicken: In a medium saucepan, combine white wine, cilantro sprigs, peppercorns, and a pinch of salt. Bring to a simmer. Add the chicken breasts and poach gently for 12-15 minutes, until the chicken is cooked through. Remove the chicken and set aside to rest.
  • Prepare the Charmoula: In a small bowl, whisk together cumin, paprika, cayenne pepper, minced garlic, lemon juice, and olive oil. Stir in the chopped parsley, tomato juice, cilantro leaves, salt, and pepper. Adjust seasoning to taste. Let it sit for at least 10 minutes to allow the flavors to blend.
