  • Juice of 1 lime

  • For the Pork Cutlets
  • 8 boneless skinless pork cutlets (2 1/2 ounces each), pounded about 1/8 inch thick

  • 1 teaspoon extra-virgin olive oil

  • Salt and freshly ground black pepper to taste

Directions

  • Prepare the Watermelon-Cucumber Salad: In a large bowl, combine the watermelon, cucumber, jalapeno, and basil leaves. Drizzle with nam pla, lime juice, and sprinkle with the ground coriander seeds. Toss gently to combine and set aside.
