  • 2 medium sweet potatoes, peeled and cubed

  • 2 celery stalks, thinly sliced

  • 1 large apple (such as Granny Smith), cored and chopped

  • 1/4 cup dried cranberries

  • 1/4 cup toasted walnuts, chopped

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon honey

  • 1/4 cup Greek yogurt

  • Fresh parsley, chopped (optional for garnish)

Directions

  • Preheat the oven to 400°F (200°C). Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized. Allow to cool.
