Ingredients
1 head cauliflower (2 pounds), cut into florets
2 tablespoons extra-virgin olive oil
1/4 teaspoon whole cumin seed
Coarse salt
Red-pepper flakes (to taste)
1 cup low-fat plain yogurt
1 tablespoon lemon juice
1 head Treviso radicchio or endive, separated
Directions
Preheat your oven to 425°F (220°C). On a large baking sheet, toss the cauliflower florets with olive oil, cumin seeds, and a pinch of coarse salt. Spread the florets in a single layer and roast for 25-30 minutes, turning once, until golden and tender.
