Naturally sweet and chewy seasonal fruit leathers, made from pureed fruits and dried to perfection for a wholesome snack.
Ingredients
1 cup chopped fresh pineapple (about 1/2 pineapple)
1 cup chopped fresh mango or 3 ripe Fuyu persimmons, stemmed and chopped
1-2 tablespoons honey (adjust to taste)
Directions
Preheat your oven to 140°F (or use a dehydrator if available).
In a blender, puree the pineapple and mango (or persimmons) until smooth.
Taste the puree and add honey as needed for sweetness. Blend again to combine.
Line a baking sheet with parchment paper or a silicone baking mat. Pour the fruit puree onto the sheet and spread it evenly, about 1/8-inch thick.
Place the baking sheet in the oven for 4-6 hours, checking periodically. The fruit leather should be dry but still pliable when done.
Once dried, remove from the oven and let it cool completely. Cut into strips or roll it up in the parchment paper for easy storage.
