Ingredients

  • 1 tablespoon olive oil

  • 1 small yellow onion, finely chopped

  • 1 garlic clove, pressed or minced

  • 1 large Yukon gold potato (about 8 ounces), peeled and diced

  • 4 cups reduced-sodium chicken or vegetable broth

  • 5-6 cups (from 1 large bunch) flat-leaf parsley

  • Coarse salt and ground pepper

  • Optional garnishes: croutons, edible flowers, extra-virgin olive oil, grated Parmesan cheese, or minced fresh herbs like chives

Directions

  • Heat olive oil in a large pot over medium heat. Add the chopped onion and cook, stirring occasionally, for about 5 minutes until softened.
  • Add the garlic and cook for an additional minute until fragrant.
  • Stir in the diced Yukon gold potato and pour in the broth. Bring to a boil, then reduce the heat and simmer for 10-15 minutes, or until the potato is tender.
  • Add the parsley to the pot and cook for another 2-3 minutes until the leaves are just wilted.
  • Carefully transfer the soup to a blender, or use an immersion blender, and blend until smooth and creamy. Season with coarse salt and freshly ground pepper to taste.
