Ingredients
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
1/2 white onion, finely chopped
1 small serrano chile, finely chopped
2 cloves garlic, finely chopped
Fine-grain sea salt, to taste
12 ounces chanterelles or mixed wild mushrooms, thinly sliced
1 1/2 teaspoons dried Mexican oregano
8 corn tortillas
1/2 cup freshly grated Parmesan cheese
Directions
- Prepare the mushroom filling: Heat the olive oil and butter in a large skillet over medium heat. Add the finely chopped white onion and serrano chile, and cook for about 3-4 minutes, until softened. Stir in the garlic and cook for another minute.
- Cook the chanterelles: Add the thinly sliced chanterelles or mixed wild mushrooms to the skillet. Season with sea salt and Mexican oregano. Cook, stirring occasionally, for 6-8 minutes until the mushrooms are tender and slightly caramelized.
- Warm the tortillas: While the mushrooms cook, warm the corn tortillas in a dry skillet or directly over a gas flame for about 30 seconds on each side until pliable and lightly charred.
- Assemble the tacos: Divide the sautéed mushroom mixture evenly among the tortillas. Top each taco with a generous sprinkle of freshly grated Parmesan cheese.
- Serve: Serve the Chanterelle Tacos hot, optionally garnished with extra oregano or a squeeze of lime for a fresh kick.
