Ingredients

  • For the Cold Tofu Salad:
  • 1 block firm tofu, drained and cubed

  • 1 tablespoon soy sauce

  • 1 tablespoon sesame oil

  • 1 teaspoon rice vinegar

  • 1 tablespoon sesame seeds

  • 1 green onion, finely chopped

  • Salt and pepper to taste

  • For the Vegetable Handrolls:
  • 4 sheets nori (seaweed)

  • 1 cup cooked sushi rice or brown rice

  • 1/2 cucumber, thinly sliced into matchsticks

  • 1/2 carrot, julienned

  • 1/2 avocado, sliced

  • 1/4 cup shredded cabbage

  • 1 tablespoon pickled ginger (optional)

  • Soy sauce or tamari for dipping

Directions

  • For the Cold Tofu Salad:
  • In a large bowl, combine the cubed tofu, soy sauce, sesame oil, and rice vinegar. Toss gently to coat the tofu in the dressing.
  • Sprinkle with sesame seeds, green onion, and season with salt and pepper to taste. Set aside to marinate while you prepare the handrolls.
  • For the Vegetable Handrolls:
  • Lay a sheet of nori on a flat surface, shiny side down. Spread a small amount of rice in the center of the nori, leaving about an inch at the top.
  • Arrange a few slices of cucumber, carrot, avocado, and shredded cabbage on top of the rice.
  • Optionally, add a small amount of pickled ginger for extra flavor.
  • Roll the nori tightly around the filling to form a handroll, sealing the edge with a little water if necessary. Repeat with the remaining ingredients.
  • Serve the handrolls alongside the Cold Tofu Salad with a side of soy sauce or tamari for dipping.
