Ingredients
For the Crackers:
1 1/2 cups blanched almond flour
1 tablespoon poppy seeds
1 tablespoon extra-virgin olive oil
1/4 teaspoon coarse salt
1 large egg white, lightly beaten
For the Topping:
3/4 cup low-fat cottage cheese
1/4 cup honey
Directions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, mix together the almond flour, poppy seeds, olive oil, and coarse salt. Stir in the beaten egg white until the dough comes together.
Roll the dough between two pieces of parchment paper to about 1/8-inch thickness. Cut the dough into small square or rectangular cracker shapes.
