Ingredients

  • 2 tablespoons olive oil

  • 6 bone-in, skinless chicken breast halves, halved crosswise

  • Coarse salt and ground pepper, to taste

  • 1 medium red onion, halved and thinly sliced

  • 4 garlic cloves, smashed

  • 1 cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)

  • 1 1/2 pounds mustard greens (about 2 bunches), stalks removed, leaves coarsely chopped

  • 1 tablespoon lemon juice

  • Lemon wedges, for serving

  • 1/2 cup pitted Kalamata olives

Directions

  • Sear the chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, and sear for 6-8 minutes, turning once, until the chicken is golden brown on both sides. Remove the chicken and set aside.
  • Cook the aromatics: In the same skillet, add the sliced red onion and smashed garlic. Cook for 3-4 minutes, stirring occasionally, until the onion is softened and translucent.
  • Deglaze with wine: Add the dry white wine to the skillet, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes to reduce slightly.
  • Add mustard greens and olives: Stir in the coarsely chopped mustard greens and Kalamata olives. Cover the skillet and cook for 5-7 minutes, or until the greens are wilted and tender.
  • Return the chicken: Place the chicken back in the skillet, nestling it among the greens. Drizzle with lemon juice and cover. Simmer for another 5-7 minutes, or until the chicken is fully cooked through (internal temperature reaches 165°F/75°C).
  • Serve: Serve the chicken with mustard greens, olives, and sauce on plates. Garnish with fresh lemon wedges for added brightness.
