  • 1 lb. fresh ginger root, peeled and sliced thinly

  • 4 cups water

  • 2 cups granulated sugar, plus extra for coating

  • Prepare the Ginger: Peel the fresh ginger root and slice it into thin, even pieces. This ensures even cooking and a consistent texture.
  • Cook the Ginger: In a medium saucepan, bring the 4 cups of water to a boil. Add the sliced ginger and cook for 30-40 minutes until tender. Drain the ginger, reserving the water for future use (like ginger tea or cooking liquid).
  • Add Sugar: Return the cooked ginger to the saucepan and add 2 cups of sugar. Stir continuously over medium heat until the sugar dissolves and coats the ginger slices, forming a thick syrup. This should take around 15-20 minutes.
