1 ounce dried porcini mushrooms
2 tablespoons olive oil
2 leeks, halved lengthwise, thinly sliced and rinsed
In a small bowl, soak the dried porcini mushrooms in 1 cup of hot water for about 20 minutes. Once softened, drain the mushrooms (reserving the soaking liquid) and chop them finely.
