A rich and savory soup made with a variety of earthy mushrooms, simmered in a flavorful broth with garlic, herbs, and a touch of cream for a hearty and comforting bowl.

Ingredients

  • 1 ounce dried porcini mushrooms

  • 2 tablespoons olive oil

  • 2 leeks, halved lengthwise, thinly sliced and rinsed

  • Coarse salt and ground black pepper

  • 1 garlic clove, minced

  • 1 pound assorted fresh mushrooms (white button, cremini, oyster, shiitake), stemmed, rinsed, and chopped

  • 1/2 teaspoon fennel seeds

  • 2 bay leaves

  • 1 tablespoon tomato paste

  • 1 can (14 1/2 ounces) diced tomatoes, drained

  • 1/2 cup marsala wine (optional)

  • 4 cups vegetable broth

Directions

  • In a small bowl, soak the dried porcini mushrooms in 1 cup of hot water for about 20 minutes. Once softened, drain the mushrooms (reserving the soaking liquid) and chop them finely.
  • In a large pot, heat the olive oil over medium heat. Add the leeks and season with salt and pepper. Cook for about 5 minutes, until softened.
  • Add the minced garlic, fresh mushrooms, fennel seeds, and bay leaves. Cook for another 5-7 minutes, stirring occasionally, until the mushrooms release their juices.
  • Stir in the tomato paste, diced tomatoes, and the chopped porcini mushrooms. If using, pour in the marsala wine and cook for 2-3 minutes to let the alcohol evaporate.
  • Add the vegetable broth and the reserved porcini soaking liquid (strain it to remove any grit). Bring the soup to a boil, then reduce the heat to low and simmer for 25-30 minutes, allowing the flavors to meld together.
  • Remove the bay leaves and season the soup with more salt and pepper to taste. Serve hot with a garnish of fresh herbs or crusty bread.
