Ingredients

  • 2 chickens, (3 pounds each)

  • Coarse salt and ground black pepper, to taste

  • 6 tablespoons extra-virgin olive oil

  • 32 whole peeled chestnuts

  • 4 bay leaves

  • 4 shallots, thinly sliced

  • 4 cloves garlic, minced

  • 1 cup sherry

  • 4 tablespoons chopped fresh thyme

  • 2 tablespoons ground coriander seed

  • 2 oranges, squeezed for juice

Directions

  • Prepare the chickens: Preheat the oven to 375°F (190°C). Season the chickens generously with coarse salt, ground black pepper, and ground coriander seed. Rub 4 tablespoons of extra-virgin olive oil all over the chickens to coat evenly.
  • Roast the chickens: Place the seasoned chickens in a large roasting pan. Scatter the chestnuts, bay leaves, shallots, and minced garlic around the chickens. Drizzle the remaining 2 tablespoons of olive oil over the vegetables and chestnuts.
  • Add sherry and orange juice: Pour the sherry and fresh orange juice into the roasting pan, making sure to coat the chickens and chestnuts. Sprinkle the chopped fresh thyme over the chickens.
  • Roast: Roast the chickens for about 1 1/2 hours, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown. Baste the chickens occasionally with the juices from the pan to keep them moist and flavorful.
  • Serve: Once the chickens are fully cooked, remove them from the oven and let them rest for 10 minutes. Carve the chickens and serve with the roasted chestnuts and shallots on the side.
