Wheat Berry Salad is a hearty and nutritious dish made with chewy wheat berries, fresh vegetables, herbs, and a tangy dressing for a wholesome and satisfying meal.

Ingredients

  • 2 cups wheat berries

  • 2 cups fresh peas, shelled

  • 1 cup fava beans, shelled

  • 8 baby turnips, thinly sliced

  • 1 1/2 cups pea shoots

  • 2 cups assorted micro greens or salad greens

  • 3/4 cup fresh chervil

  • 3/4 cup fresh mint leaves

  • Juice and zest of 1 lemon

  • 1/3 to 1/2 cup extra-virgin olive oil

  • Coarse salt

  • Freshly ground pepper

Directions

  • In a large pot, bring 4 cups of water to a boil. Add the wheat berries and simmer for about 45-60 minutes, or until tender. Drain and let cool.
  • Bring a separate pot of water to a boil. Add the fresh peas and fava beans and blanch for 2-3 minutes until just tender. Drain and rinse with cold water to stop the cooking process.
  • In a large bowl, combine the cooked wheat berries, blanched peas, fava beans, sliced baby turnips, pea shoots, micro greens, fresh chervil, and mint leaves.
  • In a small bowl, whisk together the lemon juice, lemon zest, and extra-virgin olive oil. Season with coarse salt and freshly ground pepper to taste.
  • Drizzle the lemon dressing over the salad and toss gently to combine. Serve immediately or chill before serving.

This Wheat Berry Salad is a flavorful and nutrient-dense dish that's perfect for any meal. The mix of fresh vegetables, herbs, and hearty wheat berries makes it a balanced, wholesome option for health-conscious eaters.
