Ingredients

  • 1 cup frozen shelled edamame, thawed
  • 1 teaspoon extra-virgin olive oil
  • Coarse salt
  • 1/4 cup dried cranberries

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the thawed edamame with olive oil and a pinch of coarse salt.
  3. Spread the edamame evenly on a baking sheet in a single layer.
  4. Roast for 15-20 minutes, stirring occasionally, until lightly golden and crispy.
  5. Remove from the oven and mix in the dried cranberries.
  6. Let cool slightly and serve as a healthy, crunchy snack!
