Ingredients
2 pounds Yukon Gold potatoes, peeled and chopped
1 small butternut squash (2 pounds), peeled, seeded, and chopped
1 bay leaf
5-7 sprigs fresh thyme
Coarse salt and freshly ground black pepper
2 tablespoons unsalted butter
Freshly grated nutmeg, to taste
Directions
In a large pot, add the peeled and chopped Yukon Gold potatoes and butternut squash. Cover with water, add the bay leaf and thyme sprigs, and bring to a boil. Cook until tender, about 20-25 minutes.
Drain the potatoes and squash, discarding the bay leaf and thyme sprigs.
Return the vegetables to the pot and add the butter. Mash until smooth and creamy.
