A soft and fluffy gluten-free sandwich bread with a perfect crust, ideal for any filling.

Ingredients

  • 2 tablespoons organic canola oil, plus more for pan and plastic wrap

  • 1/2 cup millet

  • 1 1/2 cups warm (115°F) water

  • 1 cup brown rice flour

  • 1 cup soy flour

  • 1/2 cup tapioca flour

  • 1/2 cup teff flour

  • 2 packages (1/4 ounce each) active dry yeast

  • 2 1/2 teaspoons xanthan gum

  • 3 large eggs, room temperature

  • 2 tablespoons unsulfured molasses

  • 2 teaspoons coarse salt

Directions

  • Lightly grease a 9x5-inch loaf pan with oil. In a small bowl, grease a piece of plastic wrap for later use.
  • In a saucepan, bring 1 1/2 cups of water to a boil. Add the millet and cook for 15 minutes or until tender. Drain and let cool.
  • In a large mixing bowl, whisk together the brown rice flour, soy flour, tapioca flour, teff flour, yeast, and xanthan gum.
  • In a separate bowl, beat the eggs with canola oil and molasses. Add the cooked millet and mix well.
  • Slowly pour the wet ingredients into the dry ingredients, mixing until a thick batter forms. Add the coarse salt and mix again.
  • Transfer the dough into the prepared loaf pan, covering with the greased plastic wrap. Let it rise in a warm place for 1 hour, until doubled in size.
  • Preheat your oven to 375°F (190°C). Bake for 40-45 minutes or until the bread is golden brown and sounds hollow when tapped.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
