A smoky, crispy mushroom topping that mimics bacon’s rich flavor, perfect for salads, sandwiches, or breakfast dishes.

Ingredients

  • 8 ounces mushrooms (such as shiitake or portobello), thinly sliced

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon soy sauce or tamari

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon coarse salt

  • Freshly ground black pepper, to taste

Directions

  • Prepare the Mushrooms: Preheat your oven to 375°F (190°C). In a large bowl, toss the thinly sliced mushrooms with olive oil, soy sauce, smoked paprika, garlic powder, salt, and pepper until well coated.
  • Bake the Mushrooms: Spread the mushrooms in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, turning halfway through, until the mushrooms are crispy and golden brown.
  • Serve: Remove from the oven and allow to cool slightly. Use this mushroom "bacon" as a topping for salads, burgers, soups, or baked potatoes.
